Our cheese selections are
provided by Georgia's own, Sweet Grass Dairy
Georgia Gouda
(½ lb piece) $6.99 - This cheese has a
little tart, tangy flavor at first which slowly fades to a smooth, sweet
finish. The Georgia Gouda can be used for a number of applications. The
balanced flavors of this cheese would compliment a Chenin Blanc or a
Sauvignon Blanc nicely. The Chenin Blanc would enhance the sweet
characteristics of the Georgia Gouda, and the Sauvignon Blanc would
bring out the tartness also found in this cheese. For red wine drinkers,
a Cotes du Rhone with our Georgia Gouda is a match made in heaven (try
Le Sec Cuvee Beaumes Cotes du Rhone only $14.99, and everyone just loves this
pleasant little red).
Holly Springs
(½ lb piece) $6.99
- The combined flavors of nuttiness
and sweetness enable this cheese to have an intricate taste. The texture
is very soft at 60 days and gradually becomes harder over time. This
sweet, aged goat cheese would pair best with a Vouvray (Chateau Solvingy
Vouvray is a great little off dry wine and would pair well at only
$11.99), or try a nice Pinot Blanc. The cheese would enhance the
sweetness first tasted with these wines. The dry finish would cleanse
the palate, making way for another bite of Holly Springs.
Thomasville Tomme
(½ lb piece) $6.99- Golden yellow color with mellow and buttery
characteristics. This cheese just melts in your mouth and seems to be a
real party pleaser. The mild taste of the Tomme pairs well with a rich
and creamy Chardonnay like Lawson's Ranch ($9.99), or a light bodied red
Burgundy (Chateau du Cray Cotes Chalonnaise for only $15.99).
Myrtlewood
(½ lb piece) $6.99 - The Myrtlewood is bright
yellow in color with a dry, complex taste and hard texture. The
concentrated flavors help this cheese to be very food and wine friendly.
This aged cow cheese has an intense flavor with a firm texture. This
cheese needs a big Zinfandel or a Ruby Port to magnify the essence of
our oldest cow's milk cheese. (Try Earthquake Zinfandel at $29.99,
or Calem Ruby Port at a price of only $13.99)
Green Hill
(½ lb piece) $6.99 - This cheese has a buttery taste and soft, creamy texture
with a thin to medium rind. Pleasant acidity and very sleek finish. This
cheese really showcases great milk from pasture grazed cows. Full-bodied
white wines would pair well with our Green Hill. A Viognier from Miner
($19.99) or Pommery Champagne ($42.99) would be delightful. If you like
red wine, a good match would be a light bodied red. |
